THM Donuts!!!!

Yeah....this just happened....in my kitchen. Oh goodness, I love my 'diet'!

  

I used my "Mugless Muffin In A Mug" recipe for the base of the donuts: http://www.pinterest.com/pin/151011393730819793/

For the chocolate variety, I just added more sweetener and baked in my muffin pans. This recipe will make 12 donuts. For the toppings on those, I melted some 85% dark chocolate with a little coconut oil to keep it softer and dipped them. The donuts in the back left have crushed peanuts sprinkled on top.
The filled donuts are simply a vanilla version of my Mugless MIM's with added vanilla. Omit cocoa and added about another heaping tablespoon of almond flour. Baked them in a different donut pan.
The filling is just a simple cream cheese, heavy whipping cream, vanilla, ground sweetener whipped and piped in. The top is the same chocolate glaze.
Baking time was about 10 - 12 minutes for the round donuts and about 15 for the long donuts.
Easy peasy!!!!
A tip on getting the donuts out of the pan......spray or coat liberally with coconut oil. Let the pan cool a little and use a soft spatula to encourage them out of the pan.

  1. I just made these in my babycakes mini doughnut maker, and they were fab! I added a bit of caramel extract to the batter, too. One batch of batter made 23 mini doughnuts. Thanks for the great recipe!
