Orange Cranberry Muffins - THM S

Orange Cranberry Muffins - THM S

5 whole eggs
3/4 c. golden flaxseed meal
1 c. almond meal/flour
1/2 c. almond or cashew milk
1 t. pure vanilla
1/2 t. orange extract
zest of 1 orange
1/3 c. Truvia type sweetener + several dashes of pure stevia (I have a sweet tooth)
2 t. aluminum free baking powder
1/2 t. sea salt
1/4 t. xanthan gum or glucci

1 c. fresh or frozen whole cranberries

Blend all ingredients well except cranberries.  Stir in cranberries.  Generously grease jumbo muffin cups with coconut oil or butter or use liners.  Scoop batter evenly into cups (I got 8 jumbo muffins out of this recipe).

Bake at 350° for about 20 - 25 minutes.  Do not over-bake.  Let them sit for a few minutes then use a soft spatula to help release them.
